Kosher Lamb Starter Box 3 — Bone-In Shoulder & Rib Selection
Explore the rich flavor of bone-in pasture-raised kosher lamb with this special starter box from Schoolhouse Farm.
This assortment features a substantial bone-in shoulder roast along with several petite rib cuts. These are young lambs, so the rib racks are especially small and lean, making them best suited for careful roasting or braising.
Everything is hand-butchered, vacuum-sealed, and frozen.

Suggested Cooking Instructions
Bone-In Shoulder Roast: Season generously with garlic, rosemary, salt, and pepper. Place in a covered roasting pan with onions and a little broth. Braise at 300°F for approximately 2½–3½ hours, or until fork-tender.
Petite Rib Racks: These racks are lean, with relatively little meat compared with a conventional rack of lamb. Brush with oil and herbs, then roast gently, monitoring closely to avoid drying them out. Alternatively, braise slowly in broth with vegetables for a rich, comforting dish.
Petite Crown Roast: This is a very small specialty cut, weighing just 0.33 lb. Season and roast briefly, watching carefully because of its size. It can also be braised alongside the ribs.
Why We Keep the Bones
Bones and connective tissue contribute flavor and body to traditional slow-cooked dishes and stock. We believe in making good use of the whole animal rather than focusing only on premium boneless cuts.
